I love the quick serve restaurant whose name has Noodles in it. There's a great bowl that is loaded with noodles and peanuts and all kinds of stuff that tastes great but ultimately is not super healthy. It happens to be my favorite.

Using as few ingredients and trying to stay around a 15-minute prep time, I successfully fine-tuned a recipe to imitate this noodle bowl and cut the calories back big time. I hope you enjoy it! This has some tingly heat to it with the addition of the sriracha sauce, but the goal was not to overpower the other flavors.

FLANNEL ME THE RECIPE

Asian Inspired Vegetable Noodle Bowl

Serves 2 - Recipe by: Dave

7 SP per serving

Ingredients

  • 4 oz. dry brown rice spaghetti noodles

  • 4 drops sesame oil

  • 2 tsp. sriracha sauce

  • 2 tsp. peanut butter powder (we use PB2 or PBFit)

  • 2 tsp. water

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 2 carrots, julienned

  • 2 tsp. olive oil

  • 2 tsp. soy sauce

  • 1/4 - 1/2 c. cilantro (optional)

  • Cooking spray

Get 2-3 cups of water boiling in a saucepan. Add your noodles and cook per package instructions (usually 9-10 minutes).

While this is cooking, you can whip up your peanut sauce. Mix in a small dish the sesame oil, sriracha sauce, peanut butter powder, and 2 tsp. water. Set aside. Drain your pasta in a colander and rinse lightly (the rice noodles have a way of getting super sticky if you do not rinse them).

In a skillet or saucepan, get the soy sauce and olive oil going on medium heat. Then place the peppers and carrots in and cook for 5-7 minutes until tender. No need to cook them forever here, as they will provide a nice contrast of texture against the soft, saucy noodles and cilantro.

Divide the noodles between two bowls and hollow out the center for a nice place to put those veggies. Place the cooked peppers and carrots in the bowl and top with cilantro and your spicy peanut sauce.

Tip: You can sautee some chicken breast in a separate nonstick pan if you are wanting to add meat. Otherwise this is plenty filling with just the veggies!
