Air Fryer Chicken Taquitos
Serves 2 - Recipe by: Dave
6 SP per serving
Ingredients
1 can chunk chicken breast
Taco seasoning
8 taqueria-style mini yellow or white corn tortillas
Cooking spray
Drain can of liquid and place chicken into a bowl. Shred lightly with a fork. Sprinkle 3-4 shakes of taco seasoning (approx 1 tbsp) onto the chicken and again mix with a fork.
Steam the tortillas so they are pliable and can be rolled without breaking. (Package usually has instructions for microwave, but we do not have a microwave so I just placed them on a wet paper towel and heated them for about a minute). Once the tortillas are rollable, you will need to work quickly. Load 1-2 forkfuls of chicken mixture into each tortilla and roll. Place them onto a plate, continuing until all 8 are rolled up, do a quick spray of cooking spray over the top, and then you are ready to air fry them.
8 minutes at 400 degrees in the air fryer, turning them over halfway through.
Muy bien - you made air fryer mini taquitos. Top with your favorite salsa or queso, and enjoy!
Tip: As with any air fryer, keep an eye on the food while you are cooking it. Your times may vary.
