Fruity Gelatin Parfait Treats

This is one that brings me back to childhood. I love Jell-o and have no qualms about eating this childish treat! This low point recipe couldn't be easier to make, and also very inexpensive at just a couple bucks for 4 servings.
It's also a good one because it's about 5 minutes of actual kitchen prep - you just dump the fruit in, and the fridge does the rest of the work! Nice option for a dessert in your lunch, or an after dinner indulgence!

Fruity Gelatin Parfait Treats
Serves 4 - Recipe by: Dave
1 SP per serving
Ingredients
1 pkg. sugar free flavored gelatin (your choice! I like orange or black cherry)
1 can of no-sugar-added fruit (peaches, pears work great) or 1c. Frozen fruit (strawberries or mixed berries are good)
1 c. "lite" frozen whipped topping, thawed
Prepare the gelatin as per package instructions. This is usually 1 c. water heated until boiling, then dissolve the gelatin packet into it. Taking the liquid gelatin, pour it and the fruit with its juices into a small bowl with a lid or into 4 small dishes (preferably with covers for storage). Top it with whipped topping and you've got yourself a delicious skinny fruit dessert!
Tip: Observe the instructions on the gelatin packaging about which fruits do/do not work well with the gelatin. Pineapple, kiwi, papaya I know do not work, and there may be more.
